Sweet corn ice cream

Food bloggers love sharing recipes and I am no exception – I have made tons of recipes from other blogs and it’s a huge pleasure for me when people try the recipes I post here. It’s a great exchange and I feel lucky to be part of it.

What makes me even happier is being able to show my foreign readers a bit about the food we eat here in Brazil, or at least in the region I live. I once got an email from Marta - a lady from New Zealand - asking about my butternut squash compote. And a few months ago the compote was featured on Apartment Therapy – The Kitchn. Faith prepared the recipe, adding her own twist, and liked it!

I give you now a very Brazilian ice cream flavor – it’s common to use corn in sweet recipes here (remember my corn fudge?). I slightly adapted a recipe from Nestlé’s Brazilian website – a touch of cinnamon and the ice cream reminded me of curau.

Sweet corn ice cream

Sweet corn ice cream

1 can (200g) corn kernels, drained and rinsed
1 ¼ cups (300ml) whole milk
1 can (395g) sweetened condensed milk
1 cup (240ml) heavy cream
¼ teaspoon ground cinnamon
pinch of salt

Place the kernels and milk in a blender and blend until smooth. Push mixture through a sieve and put it back in the blender. Add the sweetened condensed milk, heavy cream, cinnamon and salt and blend.
Pour into a metal/glass bowl, cover and refrigerate for at least 2 hours, then freeze in your ice cream maker according to the manufacturer’s instructions.
Transfer ice cream to an airtight container and put in the freezer until firm, at least 4 hours, before serving.

Serves 8-10

This flavor combination sounds so delicate and delicious! There's actually an organic ice cream shop down the street from me who sells this flavor! I'm so glad to see it on your blog; now, I know I need to go stand in line and try this ice cream!

I've heard of sweet corn ice cream, but never tried it. I have an ice cream maker now, but I'm waiting till corn is in season up in this hemisphere. I'll save this for then!

This weekend we had our Brasileiroas over for a party. I made sorvete de doce de leite. We were in heaven. Next time I'm making your recipe for corn ice cream.

I had corn ice cream once in a fancy restaurant; it was served with a berry cobbler and the combination was delicious. this recipe looks easy since it doesn't involve making a custard base like most ice creams. thanks!

your recipe sounds great, i love baking with vegetables, my housemates would be horrified though, i made beet muffins once, and tried to convince them that lentil cakes were quite good, but they drew the line at a mustard cake :)

Mmm yes! Fantastic ice cream Patricia :) I didn't realise sweetcorn ice cream was a Brazilian thing :) It's big in Asia. I wonder whether they taste very different? It looks fairly similar to one that I made but mine didn't have salt or cinnamon.

So glad that I saw this on TasteSpotting! I've had corn ice cream many times when I visit my family in Puerto Rico. I've been wanting a recipe so I can have it here in Texas. I'll have to try this out. Oh, and in PR everyone sprinkles cinnamon on top of the the ice cream too. Yum!

I grew up eating sweet corn custard in Malaysia. I would wait eagerly while my mother stirred it slowly on the stove. Maybe now is the time to make that custard again....

We have sweet corn ice cream in the Philippines but I've never tried it. Not typical for me as I love cornbread and other sweet corn treats :) (or maybe it's because it accompanies savories...) This looks perfectly made and there's no doubt I'd try it if you offered me some! :)

You can freeze it for 2 hours and then mix it using an electric mixer. Then freeze it again. I hope it works!

The first question that popped into my mind was whether the ice cream has some texture because of the corn husks. Reading the recipe I see that they're all sieved out. Although I've never tried corn in a dessert it only makes sense to use it because it's naturally so sweet! Plus, with condensed milk you can never go wrong...

One of my greatest childhood memories is running to the sorveteria to weigh sorvete milho verde-- my family thought that their American cousin was crazy-- with all of these great flavors, this was the one that I wanted.
